copper works great, providing it is thin enough, that you dont rely on it for mechanical strength to hold the pack together, and that you have a big enough spot welder with tungsten electrodes. oh, and keep it dry.

Yes you definitely wouldn't want to keep anything connected, even a BMS, if storing at a low voltage. I had my Adaptto Max-e drain my lipo packs below safe limits once and I believe the max-e screen must have come on for some reason. looks like on/off to me.
power it up and see if you get high voltage across those 2 wires, if so, its the on/off switch. short it to turn on.

yes, if your pushing the controller limits id stay with 5t motor. the controller might benifit from good heatsinks too.
