Photos of routing wires off the handlebars that doesn't look like a mess? What to do with the dc power or programming cable?

That's what I'd do.
 

I agree, I just use black zip ties, on my dark blue frame.
I just bunch them all together, zip tie and use a lighter to melt a bit of the sharp edges on the zip tie. You could try Velcro, comes in different colors other then black and white/clear.

You can take the back off an unsolder all teh stuff you don't use, if you like. But if you need it again you'll have to reinstall it.

http://ebikes.ca has sleeve and ziptie kits in a few colors (to try to match or complement your bike) to hide the wiring of various things.


Optionally, you can go to https://www.e-bike-technologies.de/index.php/en/ and look up their CA backing plate that has Higo plugs on it (no wires), and then you can replace your back with that (soldering the Higo plugs to the CA PCB you already have), and then just plug in the stuff you want. You'll have to replace your existing bike's wiring/connectors with Higo wiring, though.

I should take a picture of what I am currently riding hehehehehe, no attempt at clean look, just a half ass attempt for no damage to cables. I am always trying new things, figured out I am doing wood panniers, and maybe up my game to a decent pair of metal panniers.
 
Grin has a nice velcro nylon wrap too.
 
Cable routing is always the last thing considered in just about any electrical product. Its one thing when its a production appliance like a dishwasher or telecom switch, another when its a home brewed booster or even an LED headlight for a bike.

I ride recumbent trikes and that adds to the fun of cabling. No cables are the correct length, so I'll spend about 12-16 hours just grooming cables. Even then, running external cables is a mess.

Being semi-retired between machine design contracts I've been playing some suspended trike models based on a "stoke monkey" mid-drive with a geared hubmotor and all internal cabling. For that matter even the battery and motor will be internal for stealth reasons.
 
Here is where I ended up for now. I plant to at least remove a couple cables I'm not using. And probably shorten and direct solder the rest which will reduce the size of the wrap under the handlebars.

Brake sensor is quick and dirty but working...
