What cable size for 36v 12ah 500w setup?

hi i have an e-quad with 24v, now i want to upgrade to 36v (12v x 3 (12ah batts)) with speed controller 36v 500w and 350w motor
Should i use 30amp cables to batteries, awg14, 2.5mm2? pvc or silicon type?

The most important number is how many amps your controller is rated at. You need to take that peak number and wire under the assumption that the power will be peaking.

If you're running 30amps only for a foot or two, 12ga would be appropriate with minimal drop in voltage. 14 would be stretching it, and 10ga would be ideal.. anything above that is kinda overkill.

I don't think the coating on the wires matters so much. What's inside does though.. copper is more conductive and won't fray.

well my controller does not specify how many amps!
is there a way to measure it?

usually there is a label on it... if it is a cheap brushed controller and it doesn't have a label, the only way to find out would be something like a watts-up, cycle analyst, or turnigy watt meter.
