Really depends, if one of your banks has a FET that's not close in spec to the others then you can't push it as hard as one that has them matched. If they are all matched closely you can push it harder. If you monitor the temps of high side FETs you can get a some idea of what's going on, I don't let mine go over 80C and rarely even see 70C, but I mod all my stuff pretty heavily. A 18 FET 4110 controller "Should" be able to do 100A battery and 180-200A phase. Never tried myself.
Maybe someone else can chime in who has pushed a 18 FET 4110 harder, I have more experience with the 4115 FETs.
Best thing I can do is warn you that when you get too greedy, it costs you. I have one popped EB212 4110 controller to prove that, did it playing with my 9C 2806 in a 20" wheel
Pick your voltage, look at the estimates of amp draw I provided based on wheel size and voltage and target enough battery amps to get you into BEMF so your amps start to drop. With a 29" wheel you probably don't want to run over 75V fully charged because it takes 48A just to maintain top speed on level ground and 105A on a 10% grade. On a 10% grade at top speed that's 7800W.
