You would need a NO (normally open) or closer type switch (it will pull down the brake signal to GND when activated).

For signal wires 0.14mm² and 0.2mm² I would use 40/60 leaded electronics solder 0.7mm diameter.
Even with these small signal wire diameters, I use a medium sized soldering tip that I clean with metal wool.

Regarding the CA, it seems almost impossible to gather and route somehow the short JST cables into a sealed box. Also, there is just no space on the handlebar of a bike for doing that.
