Seems like you traded the benefits of the case for the benefit of reduced noise and increased cooling. If that was your intended effect, you're golden. I like it!...as long as the battery tabs are aluminum-to-aluminum, the metal on the outside that is clamping them together is free to be steel, brass, etc... Optimal pack placement for any battery pack would be between the wheels along the line that your axles create.

From that, any deviation should be considered a compromise to a well controlled center of gravity.

If you run a short piece of cable to a fixed place, you can effectively 'lock' the derailleur into the spot you want. I'm sure there's a good number of ways to deal with the cable piece and tension, only limited by your imagination.

7mm seems like a lot, but since the 5mm went without much effort, the extra 2 mm may work. How's the other side look? Maybe you can take some of the shoulder off of the axle on the non-drive side to compensate

Can't you just use a derailleur and lock it into place instead of buying what amounts to a fixed derailleur?

Personally, I'd spend that money on more motor or battery.
