Are you using ADC for your throttle ? If so, I'm afraid that you can't because UART and ADC share the same port. No they are not. Be very careful with VESC, use lab power supply at 12V for initial test and motor calibration.

OSHstencil are OK, I used plastic stencil, but now they have metal ones that are not that expensive. I would go with the metal one. You can download files from here https://oshpark.com/shared_projects/ztyE14yF and upload them to OSHstencil.

Set the current limit in VESC configuration tool. Start from lower values (like 40A for each VESC) and slowly go up if you need to.
