I second the Unit Pack Power answer. I have had a number of batteries made by them and they've been great. I'm actually running 72 V 40 AH, but in two 72V 20 AH packs. Splitting them up makes them easier to manage.

Something else to consider: can you switch to smaller diameter rims? The the smaller the rim, the greater the torque.

I'm looking to make an off-road recumbent soon, so this wouldn't really work for that.
Actually the Electrom is pretty good off-road. Of course it would suck to crash it and damage the bodywork.
