hi, did you tried disconnect hall sensors from controller ? if it have same issues, controller didnt use hall sensors for position - you will need other controller.

I will borrow solder station from work, its high power JBC - so i thing this will be easy job. carefully choice controller, some are not user programable and have defined power scope / throttle ramp (to prevent lose traction or wheelie), so it will not spin tires instantly as you give pedal to the metal but you will need to brake lock front wheels

Standstill torque is determined by phasecurrent of controler and motor constant - how many amps is needed for Nm. Motor constant is defined by motor construction so its not adjustable, so you can buy only stronger controller to have more torque... Limit is only temperature of motor/battery here they...

did you overheat motor ? it also can be shorted windings, or magnets losts force due to temperatures... can you try measure BEMF ?
can you measure resistance of all phases to stator (if its isolated), does have motor cogging efect ?

major inductance problem is in legs of package and bond wire in fet, so its a reason why powerfull controllers use so many fets in paralel, to lower amps by fet -> lower inductance spikes on them.
