Well, I've got the following bikes with different battery packs:

• Oset 20 with 2x 6S 16AH LiPo's (48V controller)

• Oset 16 with 2x 5S 5AH LiPo's (36V controller)

• GasGas frame with Oset parts, with Oset 20Ah48V Li-Ion battery pack.

The LiPo batteries are generally easy to get as they have a good footprint in the RC/hobby market.

Maybe consider using 2x 6s LiPo packs in series. They come in various AH and C ratings.

Domestic/hobbyist switches are normally rated for resistive loads, you may need to uprate them by 2-3 times to cater for inductive loads.
