If you use 3 x 6s2p (28Ah) in series, then each 6s2p (28Ah) pack is effectively one battery. If you use the balance leads to keep the cells connected in parallel during use, then I don't think it makes much difference how you connect the packs. Either 3 packs in series, and then these 2 in parallel, or 2 packs in parallel and then these 3 in series. You may want to consider cutting and sold...

Well, I've got the following bikes with different battery packs:
  • Oset 20 with 2x 6S 16AH LiPo's (48V controller)
  • Oset 16 with 2x 5S 5AH LiPo's (36V controller)
  • GasGas frame with Oset parts, with Oset 20Ah48V Li-Ion battery pack.

The battery in your picture appears to be a 6s 4.5ah pack. more specifically, a 6s 1p 4.5ah pack. These LiPo packs are normally all 1P, so they don't put 1P on the packaging. The LiPo batteries are generally easy to get as they have a good footprint in the RC/hobby market.

Go check the manufacturer's website and get in touch with your local distributor.
Their website should also have dimension info.

Maybe consider using 2x 6s LiPo packs in series. They come in various AH and C ratings.

I'm running 2x 6S16AH on a trials motor bike. I'm not using a BMS, just cell checkers with low voltage warning.

Domestic/hobbyist switches are normally rated for resistive loads, you may need to uprate them by 2-3 times to cater for inductive loads. That being said, using a lower rated switch will just decrease its lifetime (contact wear), so you may be fine with a 30A resistive rated switch in the short term...
