48V controllers are made in order to work with 60Vmax. A 14s 58.8Vmax li-ion battery will work perfectly

Regarding the system weight would be not too extremely high, because you would be missing the water cooling to the ambience if I understand it correctly

How could you make the water to be in contact with at least 90% of the motor surface?

front hub motors fits 100mm axle nuts distance, rear hubs fits 135mm, just take that into account. a pair of magic pie's would make you a more simply build but I don't think it will handle more than continuous 1000W of power too much time until the controller will smoke. if you don't modify anything...

It will be constant for the same voltage and amperage output, however the max torque avaliable will be reduced compared with higher voltages because the field saturation will be reached with lower amps. You need more voltage to make a broader path for more amps and greater torque

Charging to 54.6V will make the BMS drain all the other serials until this one will reach 4.2V. It will take several time to achieve, you should charge that paralleled group separately.
