Building a Powerful Ebike

I am planing to build a powerful ebike [my 2nd one] but I not sure what I need. First I'm either gonna need a fat bike or a regular bike with 150mm dropout for obvious reasons but I'm not sure what to get as I dont want any of those frames that look like dirt bikes like the grey borg or stealth bomb...

i Have an old e300 that i haven't used in years. so i want to upgrade it to go around 25mph with a good amount of torque. Im 270lbs to its gonna need some decent power. Re the battery limitations, quite likely your battery is struggling to keep up with that controller. A simple voltmeter will tell you if this is so. Also is there a way to find the actual torque of my ebike. The page says 50nm but when I look at 20inch hub motors they say 27-35nm even though the rim is smaller. Do is the posted torque an exaggeration? Also thanks forgot I needed a dc watt meter not an ac

I dont think its 100% the controller because it does say that it would draw around 35 amps at 1500W when the 2 cable (speed limiter) arent connected. If so would the motor be the bottleneck for starting torque or would upgrading the controller to say something like this: https://www.aliexpress.com/i...

Monitoring D.I.Y Battery Pack

Is there a good way to monitor the temp and/or voltage of a custom Li-ion battery pack. I feel that i am missing something really simple here but I can seem to figure it out. Is a simple temp sensor from eBay all I need for the temp monitoring?

Also I'm a noob so keep that in mind. when explaining.

If it can be done, buy a battery with a constant discharge current higher then what your ebike can is rated for. Where do i find that rating? the motor controller? or is it based on the wattage? Max Discharge Current Explanation Needed

How do you know what kind of battery to get i.e. Discharge Current Rating. How would I know what rating I needed so I dont end up overheating and/or killing the batteries?
