I would think that the tires would spin out from lack of traction before they bogged down in the sand. The hub motor sounds like it might be more reliable than a mid motor in that situation. You can spread steel frames pretty safely. However, it think the frames that Bikeisland sells are aluminum.

It seems like it would throw you off once it got up to speed. I am not sure how you electrified a kayak. A trolling motor? Electrifying a pedal boat or a water bike might be fun.

It doesn't seem very practical to convert a motorcycle to a bicycle. How would you attached the required pedals that have to be able to propel it? It would be a lot easier and cheaper to start with a used donor bicycle.

3 miles at 20 MPH average will take you 9 minutes. 3 miles at 40 MPH will take you 4 1/2 minutes. Stop signs and lights could add a few minutes to that. You need to make sure the bike has the right gearing for the speed you want to go. If the gearing is too low, you will spin out at higher speeds. You could improve it by installing a lithium battery instead of lead acid. That would cost more money than I would spend on this bike. I am not sure about the tires. Are those 16" rims?

Are you wanting to restore this as a collector? Otherwise, I think you would get a more functional e-bike by buying a hub motor kit from eBay and a used mountain bike from Craigslist than putting time and money into this project.
