e-Touring with a trailer with the same size wheels as your e-bike, and one wheel would have a duplicate motor in case something breaks on the e-bike, its an easy swap. Then put your stowed spare wheel on the trailer and giv'rrrrr on. A spare controller, spare spokes, DC air pump, tubes. And dont forget them Schwalbe Marathon Plus Guard tires. Be good to go cruising around Paris, eatin croissants, then when night falls camp out with the Gypsies.
