1987 Honda xr200 and other custom bikes

I am a senior in high school and have been building bikes for two years now. It started when I could not get a dirt bike because they were too "dangerous" so I built an e bike.
It was my first ebike so it was not all that good and took longer than it should have taken.

My second bike was a small 50 cc dirt bike conversion it took me a few days
50 cc frame
48 volt 20 ah battery
3 kw golden motor and controller

My third bike was for a senior project it took three month and I was working till the last hour. It is a full custom frame

My latest bike is a 1987 Honda xr 200
I got the bike frame for free because someone likes what I have been doing
3 kw golden motor
72 volts and 34.8 amp hours

I am having some trouble, as i ride and get moving the throttle cuts out can anyone help please?
and also it has trouble getting up hills it currently has a 64 tooth rear sprocket would it be logical to but a 120 tooth on?
