I have an idea from my other hobby (FPV flying of RC planes)
We use these things called OSDs or OnScreen Displays (Heres an example of a popular one http://www.hobbyking.com/hobbyking/store/__17745__ImmersionRC_EzOSD_FPV_on_Screen_Display.html )
It's basically a Heads-Up Display for those of us that fly RC planes using either an LCD screen or a pair of LCD goggles.
It's gives us useful information such as input voltage, voltage under load, Current Amp draw, mAh consumed, Direction to launch, distance from launch, altitude, etc etc
So anyway, It's a pretty simple little Ardu board I figure, but I'm not the best of sketches or PCB... yet.
Since we can't exactly hold a bike computer in our hands whilst we drive, maybe we could design something that would strap to your wrist and display that kind of information?
The OSD is just the basis of the idea, that it cant be THAT difficult to use a current sensor, etc...
