I built a Nixie display using UART from the VESC. I use the ESP32 to run the tubes and also to send PPM to the Ubox .

How do they fare under vibration and bumps during operation?

Would you mind detailing the build here in this thread, with circuits / code / etc?

(I happen to like nixie displays; I still have a couple of pieces of old HP nixie-display test equipment around here, I think a voltmeter and a frequency generator; I also like analog-display meters and the like).

That's amateur. There was someone on here planning to build a motor controller out of vacuum tubes. You two should connect and submit this to the Guinness book of world records as the most bizarre e-bike mod.

I've ridden about 500km , no issues with vibration
I used smart nixie tubes for this project https://www.shop-tes.com/smartnixie/display-module/
I initially wired by hand but there were too many connections and caused problems so I used
kicad to design the circuit and had it printed. I have extra boards to give out if you wish.
