With so many electric cars in Europe, I've gotta believe that the best source for high quality and high power cells for a reasonable price has to be the salvage market. eg The Chevy Volt modules and Panasonic 26ah cells with threaded terminals, that I've purchases in the past several years have been incredibly powerful along with extremely high quality due to automakers over-engineered approach to electrics. Sure you may be able to get drag-race powered cells for an extreme premium, but for just a few kg more of weight that includes drastically greater capacity, automotive grade batteries can be a source for very high quality cells with already proven cell matching and already proven cell connections.
Someone is getting the batteries from all the wrecked cars. Tesla cells won't cut it for a drag bike. They just aren't powerful enough. Too bad so little info is available regarding batteries in hybrids. Those much smaller packs could be an ideal source of very economical batteries to meet your needs, because many are designed for quite high power but relatively low total energy. Salavaged packs from hybrids are super cheap in the US, because they don't match the needs for aftermarket use due to high power density but low energy density. eg We picked up a complete 96s pack from a Hyundai hybrid for only $300.
In the meanwhile stand still regarding covid-19 in my project I asssited my brother by doing some electrical work on his combustion bike. No key neccessary to start up the bike anymore:

The tooth profile seems to be incorrect and/or too large. How were the splines made? Laser cut, CNC ground or else? Because the way the splines are cut can have an impact on the profile and dimensions.
The cut out was made by EDM machine with a super small core (2/10mm). So the machine was not the problem. It’s really the STP-file I got. The axle inside the file is smaller than the measured value.
We will get a second chance.
So hopefully the motor holding plates will be ok ...

Water return from motor and controller to the radiator is ready installed.
But for the feed from radiator over the peltier elements and pumps to motor and controler is much heavier to realise and needs some special equipment.
No, it’s not strapped down, it’s shortened to 55mm suspension length. Rules said 25 to 45mm is necessary.
Therefore I am in line. That bike is not a daily!
But I am able to lift it up a little bit by less spring preload.
