Yesterday I got some chicken that was 2 days past the sell by date. The package looked fine, no swelling, normal color. When I opened it I noticed a faint smell that was new to me. I wondered if I made it well done would it be safe, but I tossed it out.
I also got a pork steak that was 3 days past. It looked fine, and was in a vacuum pack. I believe a vacuum pack for pork is as safe as you can get. I cut open the pack and it smelled great! Tasted very good, but very salty. AFAIK the salt goes a long way to prevent bacteria.
