NEV Food Truck

I was at my local watering hole tonight and this guy said that he could make money from a food truck in my town. Yeah, the location he mentioned would work.

I had thought of building a battery electric food truck a decade ago. That venture would have surely failed from my lack of knowledge. But after doing several ebike builds, several RV battery inverter setups, and working with electrical things pretty much all my life, I think I can now electrically build one.
Putting a four wheeled truck together will be an issue for me. To keep the thing under the 1000 pound weight limit for NEV classification one would need to keep all components to be as light as possible. I can weld iron, but cannot weld aluminium!

I believe that in North America there would be a strong market for such a vehicle. Other parts of the world are already there.
 
NEV's don't have a weight limit.


....and I always thought there was a 1000# weight limit for NEV's. I guess that reading the regulatory code on this classification of vehicles is the place to start.
