Recommendations for e-bike hardware

Hello, I am new to the e-bike world but being a DIY freak and an electronics hobbyist I think it will be relatively easy to convert my bike into an electric one.

I am not interested in the e kits as they are too boring for me and put too much weight at the back of the bike ruining the balance and since mine is a mountain bike, I'm looking for a RC motor, ESC, throttle speed control etc.

Problem is I have no idea where to start. I have access to a 3D printer to design and print the pulleys/housings etc. but I need some guidance regarding what motor/esc combo Would best suit my needs.

I weight 70+ KG and would like to get as much torque as possible with a top speed of around 50 KPH as that is how fast I can pedal.

Will this motor and ESC work?

How can i have regenerative braking as well?

Lots of questions as even after lots of youtube videos I am left with many blanks to fill.

If you've got that many questions, and no idea where to start, then designing and building a fully custom setup probably isn't the way to go.

Get a bafang bbshd
Not boring
Good weight distribution
Plenty of torque
Will do 50kmh with the right gearing
