Throttle cable to Food thermometer to motor, controller, etc

The thermometer is a Maverick wireless redi-chek. Besides using its beeper function, the plan is to wire the throttle cable as such, that when the alert temperature is reached, it will pull down the throttle signal.
The question is how?

Beeper will be a piezo - try hooking an LED across it and see if it blinks/illuminates. If it does, use an optocoupler to pull the throttle wire to ground.
