Hi, I'm going to convert a Razor E100 scooter to brushless system with using this kit:

https://www.aliexpress.com/item/32922419294.html?spm=a2g0o.productlist.0.0.3f2d3b5df7QvdI&algo_pvid=e29de629-dc24-4cb1-b972-a6b4ac2d425f&algo_expid=e29de629-dc24-4cb1-b972-a6b4ac2d425f-12&btsid=0b0a0ae215983005202382224e1437&ws_ab_test=searchweb0_0,searchweb201602_,searchweb201603

I want to add a fuse to it. Can someone tell me what amps fuse should I attach to it?

The controller that comes with the kit says it's current is limited to 38A, so I'd use a fuse rated at least 60A or 70A...Even a 100A fuse would be fine. Fuses offer protection in the event of a short and current skyrockets instantly in such a case, so the current rating isn't all that important. You just want to avoid cutting it too close to prevent blowing fuses during normal operation.

I have bought 70 Amp Maxi Blade Fuse with a fuse holder. As soon as I receive the kit I will start showing pics about the modification.

Do U think I should add capacitors to it? and if I should add capacitors what capacitors should I add to it?
