So I am building a new bike with some linkglide and bafang parts. I am now in the process of putting on the chain and a new rear derailleur.

The bike is built almost from scratch so I have no old rear derailleur height to compare with.

What would you say is the correct height for it to be installed on the bike? Like image 1=maximally tilted upwards?
image 2=in the middle kind of
image 3= maximally tilted to the bottom

That angle is referred to as B adjustment (or B tension when there's a spring in that knuckle on the derailleur). You set it to whatever angle puts the jockey pulley at the correct distance from the large sprocket when it's shifted inward to that position. "Correct" is usually as close as it can run to the sprocket, without fouling the chain when shifting in or out of the gear.

There is always a stop on the derailleur that engages a tooth on the hanger, and the stop may or may not have the B screw in it (sometimes the adjustment is elsewhere).
