DC-DC converter - Mini ITX power supply?

I've seen earlier threads on using inexpensive AC-DC switching power supplies as DC-DC converters for running lights or other accessories.

I've been doing a bit of research for a motorcycle project, and there are a lot of neat little accessories normally used on computers that I'd like to use, but they all use different voltages: 12V, 5V and 3.3V. However, I started looking at mini-ITX power supplies, which can provide all of these voltages, at different amps.

So do you guys think that something like this would work, or is this a pipe dream?
 
Good chance it will work if your pack voltage is high enough. Not sure what the cutoff would be, and I bet it varies widely between models.
