Electric motorbike, speed controller

I'm looking for a suitable motor and controller for a electric motorbike. Originally I was planning on using a series wound dc motor as I have heard they are favourites for over volting. I want the bike to have 300hp peak and 100 hp continuous . I don't like the idea of having brushes though and would be more interested in experimenting with 3p. Has anyone had any experience with over volting 3 phase motors? by that i mean over volting and increasing the frequecny at the same rate. Cost is also an issue as i don't want to fork out thousands on a store bought speed controller and motor. A open source controller would be a better option for me as i'm keen to learn more about electronics. Please help me !!!!! I'm happy blowing up old 3phase industrial motors as i have pretty much an unlimted supply.
