Also can anyone guess the original manufacturer of 50A controller settings are? So we can copy it and use it in fardriver settings with a bit bump up for faster speed? The original settings for those dual 50A controllers no one knows

Most software used in bespoke controllers is likely very customized, even if derived some commonly made model. Getting settings backed out from those isn't likely.

Only the YXT is what it read speed signal, any other are left,right,headlight..etc

I don't think fardriver controllers have anything to do with signals, headlights, etc. Not any that I've seen. There are some integrations with brakes (for motor cut off, regen awareness, etc) but that's about it. My understanding

Now another important is the stock display Ebike- liquid LCD that has 1 wire that said YXT , before that that 1 wire followed and connected with a LCD Throttle and it work, now i connect the 1 blue wore from fardriver but it would pick up any signal, could any help me with that experience?

Fardrivers used, I believe, something called "one line" single wire protocol for sending data to display units (that blue wire you found). What you've found is that the display speaks a different thing, thus no data. Your best bet would be to buy a far driver compatible display; it's very unlikely you'll find anyway to get the stock one to work without, like, injecting a custom made microcontroller "translator" in between the controller and display. (No way would that likely be worth the effort.)
