At Costco!

Got the costco trial membership cards and found some Ortega taco shells and assorted jack cheese which is hard to find in Japan. Found some smoked turkey breast, too! Whole frozen turkey was also available for 3600 yen but maybe only during the winter holidays. Had to settle for the breast since the whole burd won't fit in Japanese fish broiler ovens..ha ha!

That would be a pretty big sacrifice, no tacos. Hopefully the store keeps stocking the shells. Maybe you can get em on ebay?
 
yeah, the first one opened about 5 years ago? in Yokohama, maybe to serve US navy families living in off-base navy housing. I wonder if navy folk have ovens and horizontal freezers in their small Japanese homes.. One thing I miss in the US is a nice big gas oven. I love baking cookies. I wanna learn to roast a turkey, too.

Costco opened in Kawasakia few years later, where we go. Just in time too coz Japanese food radioactive contamination is making me nervous!

Thanks! Actually I was getting so hungry while making it that I got all sloppy with the shredded lettuce, I should've shredded it much more finely and laid it down more neatly. Little things like that makes a huge diff in taste. :wink:

I've improved my pad see ew recipe since starting on it a few years back by combining different recipes and techniques from totally different dishes from Philippines and others. I just let my subconscious do the pick-n-choosing!
 
Oh and don't bother with so-called taco sauces in a jar, they always taste sour. Marie Sharp hot sauces are the Beez Kneez.

Just had another taco fiesta yesterday and tried to make them more presentable but still not very good…FYI I can only cook while I'm hungry which I almost always get the best results but if I get too hungry my blood sugar drops and I just trainwreck the whole thing.. ends up over seasoned or overcooked and looks like a heap. :oops:

BTW, I finally got around to dl all seasons of The Nake Chef. I've only seen two episodes way back in early 2k just by chance and forgot all about it.

OH WOW! Jamie Oliver had a bunch of shows.. I had no idea! AND a videogame, he he! NICE...

Naturally I had to start with his USA tour and wouldn't you know it..the episode Jamie decided to start with was on MEXICAN FOOD in Los Angeles

OF COURSE! coz Mexican Food is so damn good.

DL'd it last night and man I was howling. Food shows here in Japan sucks. And during my visit to the US last march I found food shows I haven't seen and were engrossing but Jamie's shows has got to be thee best. Some of the situations in his shows seems staged but there are always lots of great tips and tricks offered.
So next challenge for me is enchiladas YUM!

Aha, but you say you don't have an oven big enough. For our 2011 Christmas Party for 60 people, we did not have an oven either, but we had a BBQ in which we cooked two 25 lb turkeys. But you don't have a BBQ with a lid on it? Use two Woks, one upside down on the other one.
We purchased two, one time use, 4" deep aluminum turkey trays and a roll of aluminum foil.
1. Turn on the BBQ, close lid and wait until thermometer indicates 350*F
2. Put in turkeys with aluminum foil wrapped over top, close lid.
3. Wait (@ 15 minutes per pound). Twist the leg until it turns free of the joint (or use a thermometer in the breast) .
4. Take off Aluminum foil for the last 30 minutes to brown turkey.
5. Eat :!: :mrgreen: :mrgreen: :mrgreen:

Hi thanks for the tips, I'll keep them in mind, keep 'em comin !

I like the two woks idea.... I can weld some kind of ring on the top wok (upside down wok) to hold charcoal in to get that "Dutch Oven" effect :p

And I can see using a spit in the middle

I understand that roasting a turkey is as easy as popping that sucker in the oven. What I really want to learn is how to spice up the traditional American holiday turkey. My US family cooks great turkey but the stuffing is a bit bland for a spice eater like myself. And I'm thinking of doner kebab type of approach with a rotisserie and spicy seasoning from... where else? TURKEY, of course!

I'm talking Turkish Turkey in pita

I also want to try to reinvent gravy into something great but healthy.. :idea: ooh curry gravy on mash potato...

also what i see in the future is to move to place with a yard where I can build a brick oven and detachable rotisserie

Dig a hole in the ground and line it with rocks on bottom and sides. Get a fire going in the hole and keep it going for 3-4 hours until the coals are almost out. Scoop out most of the coals. Wrap your entire meal up in white sheet, then wet burlap. Put in the hole and cover with dirt. Wait 3-4 hours, depending on the size of the meal. I have been to many of these feasts from a roast, to a turkey to a whole 150lb pig. The pig hole was dug with an excavator, the fire was kept going for 12 hour, and the pig was buried for 8 hours, with hot rocks on top. A chain and cable sling was under the pig for ease of recovery with the excavator.
Then there was a meal of smoked venison, smoked oysters and corn on the cob. We started coming to our senses a couple of days later because they used some kind of "weed" for the smoke. :shock: :shock: :shock: :lol: :lol: :lol:

yeah I've seen this done by tribesmen, Hawaiians I believe. What is this method called?

It's a shame we live in an apartment building. I'd like to try it when we start family camping. But I think turkey is only available at Costco for winter holidays, camping in winter cold would be like doin the Donner Party thing :shock:
I will have the two woks idea a go right over the gas stove.

Smoking with cannabis sounds really good! So you can get high off smoked food? Or was it from the cooking process?

I am an instant JAMIE OLIVER FAN....His approach to cooking is so PUNK ROCK!

...reminds me when my boy started preschool.. I was concerned about the quality of his school lunch coz he always came home hungry. I asked if I can order a meal to sample it at home but I got the run-around. Long story short, the school eventually changed to a better vendor.

No wonder the lunch delivery guy barely acknowledged me when I greeted him in the morning... dodgy bugger he was hey?<--- Jamie impersonation 8)

I was a fan of Martin Yan of Yan Can Cook show. Loved his sarcastic humor...gotta catch up with what he's done lately 8)

I got a lot of family from Hawaii and I've been to Luau's and watched them roast pigs underground many times.
After rubbing the pig with salt they pour a sauce called BBQ Liquid Smoke on it. They cover it with lots of sliced pineapple and sweet potatoes then wrap it all up in 4 layers of bannana leaves before they put it in the ground with the hot coles.

My favorite is Kalua Pig... a portion of the pork meat is cut into 1-inch cubes and/or shredded off the bones and wrapped in foil to steam with the rest of the pig. The stuff is sooooo juicy and just melts in your mouth.

quarter-pounder.jpgMcDonalds! Yum... my son and I had McDonalds for lunch the other day. He's not much into his cheesburger as he is with just frenchfries and milk. Me.. I'm not special.. I love my quarterpounder with cheese meal set, and yes with fries and coke. We have McD's about once every other week but (and EXCUSE ME FOR HAVING AN OPINION :roll: ) when we do eat there I always avoid those shitty little toys that comes with the kid's meal sets. You know the ones, little plastic things that bares no resemblance to reality or at times even to any known animated characters, just globs of shiny plastic that light up or rattle around. But what I really HATE about those "toys" is half of them don't even work right, or at all :lol: ! after years of accumulating so much of them I finally got pissed and that's when it dawned on me why McD's want to flood my house with their crappy toys... because it has their M logos on them. Just straight up, shamelessly greedy advertising tactics. They used to have big ass M's on em but they recently shrunk them down beyond adult's perceptible levels..tiny little fckn m m m's that only sharp little kids can see. Not only that they never really cared about rewarding kids for choosing to eat there, I think personally think (and again EMFHAO :roll: ) they intend to insult the parents and (to add injury) TO INSULT YOUR KIDS with GARBAGE. They may as well turn that M upside down and shaped like the middle finger aimed at their customers. :lol: So I declared them to be banned in our house. I rounded them up and tossed them out. At that point I planned of opting them out of the kid's meal, but when I refused the toy the young female cashier seemed to insist that I pick one out of their fine selection. Hell, I try to be easy...I figured maybe she didn't understand me or she may get in trouble with the manager.. so I chose one and immediately dumped it in the trash before the boy sees it. Nowadays, if he does see it I dump it in front of him and tell him that we'll go to a toy store and buy the good stuff, and he's cool with that. 8)

But you know what? Here's the punchline: Yesterday, my wife came home with bag of more McD's shitty little toys. Man, I was pissed. :evil: :lol: :evil: :lol: :evil: :lol: :evil: :lol: :evil: :lol: :evil: :lol: :evil: :lol:

Alright, let's talk spaghetti...

I have hugely improved my spaghetti with shredded meats vs "ground beef" aka mystery meats :evil:

This is My meat sauce recipe which was inspired by high school lunch. :lol: And many little tips and techniques that I learned over the years from other dishes were used to improve it. I've never taken cooking classes and I've never followed any recipes when I started to cook it in early 2k so I'm not even sure this is the proper way .. but I do remember looking at the ingredients on a jar of spaghetti sauce and that was enough to get me started from scratch.

-pots, 2 med ( I use only 1 ) enameled pot is best. Would like to try enameled iron pot soon
-wok, stainless steel, 1 med
-tomatos, whole peeled, 2 cans
-tomato puree, 1 pack
-oregano, dried, 1 tbsp
-parsley " " "
-basil " " "
-beef, shredded fatty, finely diced 350 grams
-pork, " " " 250 grams
-garlic, minced, half of bulb
-onions, finely diced, 2 large and ripe
-carrot, 1 grounded with celery
-celery, " "
-oils, veg and olive mixed
-salt and pepper (fine or coarse)

heat 2 to 3 tbsp of oil in a pot, add canned tomato and mash. add 1tsp salt and pepper. add herbs. Let simmer in medium fire stir frequently.

while tomato cooking, mince meats together while adding salt and pepper and set aside. for best flavor, mince and season meats only 10 to 15 minutes before sauteing

In a wok, cook half of garlic with enough oil for all ingredients listed, add meats. When done, scoop the meat and as much garlic as possible and mix with tomato (but leave all oils in wok) OR if waiting for tomato to cook place meat in a bowl covered so it doesnt dry up. Tomato cooked? turn fire off and mix garlicked-meat with tomato and cover pot.

saute other half of garlic in wok. add onions and ground carrot/celery. sprinkle salt for faster cooking. when onions are translucent add to pot with tomato puree and simmer and stir. taste and adjust salt till awesome. stir with wooden spoon to feel the bottom of the pot to check it's not burning! stir when you see tomato sauce bubbling, this means the fluids are rising from the bottom of the pot which will eventually dry up and burn so stir when you see bubbles. basic.

Start boiling water for pasta in another pot (but dont forget the sauce,check). I only use one pot and wash the wok to boil pasta. Only when water starts boiling add a table spoon of salt per two and half portions of pasta. boil in med heat but 1 minute less than package instructions for "al dente" stylee.. sauce ingredients should be thoroughly mixed together and cooked at this time so serve it over pasta immediately after draining

and enjoy!

correction on "shredded meats", they were actually thinly sliced meats with nicely marbled fat (not just fatty) and not that much more in price vs ground beef.

I have a cheap plastic grinder held down only with a suction cup at the bottom so it pops off when I'm cranking ...PITA.. so I chose sliced meats for easier mincing with a knife, soon I'll mince with two cleavers like chinese cooks. I would rather buy steaks and use a industry standard grinder but it's expensive.. either way whole fresh and juicy meat is much better than mystery ground meats that dried up throughout the day at the store. And seasoning while grinding/mincing kicks ass!

Oh and please don't use sugar like my US fam does, there's plenty of natural sugar in onions when it's caramelized.

I was running late and didn't have time to add finely diced bell peppers and celery leaves which I can go without but the wife likes it. And I normally have chunky mushrooms but due to the nuclear crisis they are off our menu cos they sponge up radioactive material.
