    The photos suggests that you have connected the negative side of the capacitor to plus (red). Also, try to keep the leads as short as possible. I.e. Try to mount the capacitor closer to the cables.

    Do you really mean 0.5Ohm and not milli Ohm? If your shunt is on 0.5 Ohm a 50A current will yield a 25V voltage drop over the shunt that will seriously affect your performance.

    Check the skateboard / stand up scooter forum for the VESC. Should be perfect for the task. You could write an application for whatever throttle ramp you would wish for that makes it activate smoothly. No need for any external arduino/whatever, all code would run in the ESC.

    Happy to help. 60V is maximum rating and you should always give an overhead since it is an inductive load you are connecting that will be able to generate voltage spikes.
