I'm thinking of getting a dual suspension mountain bike and would like to swap the front wheel for a hub motor during the week. Problem is the forks are the 15mm type. Is there any way of mounting a hub motor to this kind of fork?

I don't think it's possibe to get the motor axle into the holes on the forks because there's not enough clearance to tilt the axle at the right angle. You need an axle that slides in from the side, but all motors that I know have a fixed axle, which slides in in the direction of the fork legs. You could sell the forks on Ebay and buy some that's just as good or better.

I'm afraid if you really want a motor in the front, you'll need a different fork. If you swap to something with 10mm QR ("normal" dropouts), sure you can put a motor up there, but keep the power down. More than 1kw and you're risking a destroyed fork and a loose wheel.

If you're getting a full suspension bike for an ebike conversion, put the motor in the back. If you want a mountain bike that you can put a motor on during the week to commute, really consider carefully what you want to do. If you want a trail bike, you don't want to convert it every time you hit single track. If you want a dirtbike, you really want to run a lot of power, and thus the motor needs to be in the rear if you're using a hub motor. And you don't want to destroy a nice trail bike with a sloppy setup.

Personally if you want to mountain bike with it, I'd consider two different bikes, the second just for ebiking. It's easy to get all jazzed up about the downhill bikes being converted here, but you don't need eight inches or even four inches of travel for the road, just something strong and reliable. People seem to forget on a bike you can go around bumps and potholes.
