http://www.parktool.com/repair/bikemap.asp bicycle tool manufacturer, has How To's, also have a comprehensive book - the Big Blue Book
http://www.bbinstitute.com/the-barnett-manual This is the manual used by bike shops and TAFE certificate courses, but a bit pricey for the home mechanic. Some sections can be downloaded for free.

And of course there is always YouTube!

Another of my favourites that is free to download is the iZip Currie manual. http://www.izipusa.com/pdf/iZipBikeOM2008-10-02.pdf

It covers a lot of different e-bikes with wiring diagrams for brushed and brushless with throttle, PAS, PTS and TMM4 systems and shows basic maintenance procedures for fitting/adjusting brakes, bearings, headsets, etc.
 
Thanks for that, the Sutherlands Manual 6th Edn 1995 was a good find for a free online read but you have to pay a small fee to download it!

another couple from that same site is the Bicycle Repair Manual - I have the book and like the step-by-step photos. http://www.scribd.com/doc/22743195/Bicycle-Repair-Manual-Chris-Sidwells

and Barnett's Manual http://www.scribd.com/doc/16958306/The-Barnetts-Manual-of-Bicycle-Repair which is on par with Sutherlands
