Most systems these days don't work like that, to better comply with various localities' laws on ebike limitations.

The very few that do would have a loop of wire that comes out of the controller and goes right back into it, usually wiht a single-pin connector, and uplugging that could disable or at least change whatever limit it has.

It's much more common for their speed limits to be hardcoded into the controllers. In that case, you'd have to replace them (and their displays to be sure of compatibility) with "kits" that have the features you want the bike to have, and that are compatible with the rest of the parts on your bike (or that you can change those parts out to match the new controllers). You will want to get controllers that have the same voltage range, and the same current limit, so they'll work with your battery and not damage it or cause you other problems.


If you're lucky, there might be a setting in a secret passworded menu in the display of your present system that can change it's speed, but you'd have to poke around the internet to see if anyone has ever found that by accident for your specific bike model and year, and then guessed what the password was or figured it out by trial and error (or you can try do this on your system, and post up the results for the next person if you find it does have this ability).
