It should be able to reach highway speeds (>55mph).

Parts could be an issue. A conversion would have a larger community of owners and resources.
 
I think Ford limited it to 75mph. Probably has a Siemens motor in it. As I recall, around a 300V system.

The Siemens motor is very good. I think you can still get parts for the motor and controller.
 
There's a spare motor on the 'bay for $2k...
