Hoverboard batteries running in Parallel?

Note that packs do not "push" current level, amps are drawn or demanded by the motor through the controller.

I have yet to see a BMS that is actually current limiting

as in, allowing operation to continue when amps drawn attempts to get too high.

At best they trigger an isolation, aka latching circuit protection against overcurrent. Like a circuit breaker.

Many simply state what they are supposed to withstand, and up to the designer to ensure they don't burn. Like a fuse.

1 pack having a limit of 20amps would 6 packs in parallel be able to handle roughly 118+/- amps?
yes, but vendor ratings are rarely real, need actual testing to know

im looking at doing the same thing with x8 of these to make up a 72v pack the draw im looking at is around 100-120amps.
