If you had a 15ah 48v 18650 battery pack and were drawing about 2c from it for 20 minutes, how hot would it get? how hot would the terminals be? 50-80'C ?

Without specifying the exact model of cell, i.e. knowing its internal resistance, you can't tell it.
However most commercially available packs would be pretty hot under such conditions.
We are talking about draining the pack to about 33% SOC at 2C.

what is the hottest that an average battery with high resistance could get to? and the copper that joins the battery? for example 2.5mm diameter copper? i think probably assume that a bad quality battery or a dodgy contact, could get to 70 degrees maximum?

My gut reaction guess is that if you see 50c, it's hammering the dogshit out of that pack. 60c, you must be really hammering it. It might be within spec c rates, but the pack won't like it. Cut c rate specs in half for reasonable real world use. Cut even more for Hobby lipo.
But I would say 40c is fairly normal, if you are just pulling reasonable loads. This will happen when you pull full load at the end of charge. No cell likes a big discharge rate when it's nearly empty.
