I'm considering a Norco with 24 speeds which are controlled by a twist grip shifter.

Option 1: The vendor can change out the grip shifter with a trigger shifter to accomodate a twist grip throttle for an eZee motor kit.

Option 2: Conversely, if the left hand grip is not used for anything (which I don't know) I can use a left hand throttle.

Since I'm not familiar how 24 speeds or trigger shifters work maybe someone can advise.

Twenty four different gear ratios is obtained by shifting the front derailleur on the triple chainwheel with the left shifter and the rear eight spd cluster with the right. You didn't say which model Norco but it's most usual to have the same style shifter on both sides. Amputees might use two different types on the same side.
Personally, I don't like twist grip shifters. They're noisier and more fragile than a good thumb shifter.
You could probably get a thumb actuated throttle instead of the twist-grip if you wanted to keep your twist grip shifters but I'd switch 'em both out for thumb shifters.
The cheapest solution would be to just add an indexed thumb shifter for the rear gears.

Thanx Zoot Katz.
Its a 2007 Norco Axia with a step-thru frame. I like it because it has disc brakes but concerned that 24 spds is too complex for me.
I take it that thumb shifter is the same as trigger shifter?
