For a Dual, 8S--Any opinions on these?:

Are the boat ESCs quieter?

Not much of any reliable 8S ESCs. You can use (2) 12S ESCs from my site - wire 2 together with a Y connector.

People seem to like the 6S ESC 120A better than the HK 150A (HK 150A) is much louder when braking.

Boat ESC's you might be able to use but some you might not. Risk you take unless someone has already done the leg work. From what I've seen nothing really reliable as far as boat ESCs go.
 
It's weird that any boat ESCs have breaking--I guess assumed that they were being programmed with a dialed down % reverse setting to work as braking.
