I'm wondering if its possible to hook an ebike throttle up to a childrens ride-on atv, 6 or 12v.

Right now its just "on" or "off".

I'd love if the kids could learn to apply throttle gradually instead of it just being an on-off switch.

Would a ebike throttle work as a potentiometer so it can apply variable power (1-100% depending on throttle position)

No a regular potentiometer wont dissipate the heat ,you would be best off getting a brushed pwm controller (Aka speed controller). A better option is an ebike controller would also have lvc and ebrakes which might be nice safety features for the kids. (Brushed controllers can fail and go full throttle).

Either try eBay or find a second hand kick scooter with flat batteries and salvage from that.

Many ebike controllers won't work with 6-12v as they would think the battery is flat (lvc)

I imagine they have no control gear at all. Just a brushed motor. So I agree a brushed controller is likely the way, but one without lvc or one known well enough that it can be removed

Edit:
that controller will only work on 12 volt +

You can switch it out with 6 volts...

Just make a on/off switch, At my local electronics store they have 10-40 amp dc switches..
You would want two, one to turn it on and off for the throttle, and the other as an emergency cut off in case the other welds shut...
