Bakfiets and pedal assist

I am new to electric bikes and am wondering if anyone could help me to figure out which mid motor to put on a two wheeled bakfiets that weighs about 65-70 pounds (without cargo). I live in a city which has long steep hills. The bike is very similar to a Bakfiets.nl and Workcycles Kr8.

The bike can't have a hub motor because the current wheels have heavier spokes than a regular wheel. I have read about Bafang and Schachner mid motors and those appear to be good choices but I am open to hearing your ideas. I also have the following questions

1. I have read that some motors don't kick in as soon as you start pedaling and may also continue to supply power after the rider stops pedaling. Which motors do not have that problem?
2. Do you recommend cadence sensor or torque sensor?
3. What size motor should I buy?
4. What type/size battery do you recommend?
5. And finally, what brand do you recommend?
