Need advice on throttle sensitivity and solutions

Greetings! I have put a 48V, 2000W setup in a Razor Quad, which started life as a 36V, 350W system. As you might expect, it's a tad overpowered, which is fine - but the throttle control is unusable! Here's a video of the build if you're curious:

On the workbench, you CAN roll into the throttle slowly enough that it would be workable, but in real life, as soon as you crack the throttle even a tiny, tiny amount the machine lurches forward hard, which usually has the effect of adding more throttle, since that's what you're holding onto.

Basically, the first 30 degrees of throttle rotation go 0-1v and do nothing. Then the next 1 degree of rotation does 1.0 - 1.1 and that's basically "on/off" to the controller. I'd need to really sweep slowly in that range to get a gradual throttle.

I was thinking I'd build an Arduino ESP32 project to "remap" the throttle output to be much, much more gradual down low, and started looking for prebuilt solutions. So I have two questions:

1) Is the motor and controller (a generic undocumented Chinese 48V eBike controller) capable of it if I remap the throttle?

2) Does CAV3 do this for me? If so, could someone explain what I'd do with CAV3 in baby steps like you wish someone would have explained it on your first day (because this is my first day and my first post - I skimmed it's manual but it's pretty dense!)

The problem is that your throttle is operating in speed control mode. The controller will apply unpredictable and large amounts of torque when you open the throttle to get up to speed. Get a controller that does torque request throttle. Then the amount you open the throttle is directly proportional to the force applied. I like ASI. And a decent throttle (Domino) while you're at it.

Problem completely, totally solved.
 
I'd love to, how do I find one that does what you say and will work in a 48V, 1800W system? If you shoot me a link or even keywords, I'd appreciate that. I'll google Domino and ASI in the meantime!
