I have the following kit, with what looks like a generic 48v 10ah ebike battery produced in the millions:

The battery is a bit larger than I would like, is there any way to remove the internals from the battery case and maybe pack them in something with slightly smaller dimensions?

I am just getting jealous of batteries from such places as Luna Cycle that have much smaller dimensions for the same 48v 10ah rating.

You can theoretically remove all the case, but don't expect too much reduced dimensions. The pack will maybe done with cheap 2200mAh or 2600mAh cells, so that's why it is so large and not so much Ah.

Also there are electronics, as acitavtion keylock that you will need to relocate

I just wanted to follow up on this since I went ahead and took my no-name battery (48 volt, 10 ah) out of it's aluminum case.

All this took was unscrewing the ends and breaking a glue line on each side of the battery, and it popped right out. I left the wiring intact (power connector / charging connector / key lock cylinder) and just cut away some of the plastic around the charging connector to save some space.

Original dimensions: 14.5 x 6 x 3 (inches)
Battery without case: 10 x 4.5 x 2.5 (inches) plus the wires and dangling connectors and key cylinder

The smaller dimensions have made it possible to put this battery into my Ibera large Frame Bag along with the controller. I am very happy with the results. However, I now do not have any padding around my battery except the tape and thin plastic that the manufacturer used to encase the cells. If I bought the EM3EV frame bag or a similar one I would be able to fit a bunch of padding and probably my tool kit (for tube changes) as well.
