I think the Sheldon Brown site has a chart.
I use Alex DM24 24mm rims to mount my 2.4 " Holly Rollers.
Hard to beat these rims for quality/value ratio.

For anything 2" to 3" I'd recommend a 32mm inside width rim like the Alex DX32 or Weinmann DH39

P39D/MTX39/DoubleTrack - the best rims for hookworms. In our country, they are considered to be the strongest in the opinion of many e-bikers. 32H is good for front wheel, 36H only for rear wheel using hub motor

wider > thinner for rims' strenth, maybe attempting at least half tire width with rim width? Thinking through 4x4's to racecars to dirbikes and sportbikes there are trends that are applicable, depending on what you want to do, with good medians.
I'm really happy with price/strength of alex 32mm 36h rims and up to 2.35-2.4" tires. I wouldn't be afraid to try 2.75" if they fit the bike.
