In general, for your type of bike motor kit, a 10 ah battery would be the absolute minimum.
Your bike won't pull all 25 amps all the time. At fast cruise, likely it's pulling about 18 amps. Half throttle till 10 mph will take some of the sting out of the 25 amps pull at starts.
But you would expect up to an extra year out of a 15 ah, because each cell would be asked to provide 30% less current. So next time you buy one, look for a larger one.
With the battery, look for the best vendor, not the cheapest. Good cells, 10 ah will be plenty. Typical cheaper cells in the battery, get a 15 ah. Meanwhile, just feather the throttle till you get rolling.
