I don't see anything in the two (of five) pages you've shown that is probably associated with the reversing function. There could be a function on one of the other pages you haven't shown; the manual or help might tell you what it is if it hasn't been mistranslated too badly.
The controller may also have a self-learn function you can use to fix the problem.
Or you can manually experiment with the 36 possible phase/hall wiring combinations to find the one that goes the right direction, at the lowest battery current (<2-3A usually) at full throttle with no load (offground) with no unusual noises at the right wheel speed. There are at least a few threads about how to do this, with flowcharts, etc., but if you simply write down all the combinations as you try them, along with the exact detailed results each one gives you, you'll find the right one probably long before you've tried all 36 combinations. (usually <six are needed to try before you find one)
False positives either have higher current, weird noises or behaviors, too high a wheelspeed, etc.
