What do you suggest for the best feeling pedal assist?

Some systems use the torque sensor only to determine that you're pedalling, but the controller still works on speed control. Some systems combine torque speed and cadence sensors in an attempt to give ideal power. IMHO they all have advantages and disadvantages.

The only PAS systems I'd definitely avoid are single level ones with a cadence sensor, higher powered ones with a three-speed switch, and the most diabolical of all: those that give more power the faster you pedal.

If you use speed instead of current regulation, is the S06S noticeably better than the KU65 with its 3 speeds? I mean wrt to the riding experience, disregarding the extra info re speed, distance etc.

Yes. In terms of normal performance figures, not a lot of difference, but smoother, and the five levels of PAS give more options for increasing range. Plus you get a nice LCD for speed/distance display and adjusting speed limits, etc. Basically, things have moved on controllerwise. The S06S is modern and full of features. The KU65 was good in its day.
