19 vs 21 inch wheel

Hello - I have this Enduro Ebike with 19 inch road tyres. Paired with extremely torquey QS 273 5T motor. 20kw peak power. I ride 95% on road/bike trails and little bit off-trails. It’s so amazing how this thing can take any hill with ease. Extremely torquey motor which translates into great acceleration in 0-50 mph range. That’s where I stay mostly

I am 6 ft tall and feel that the bike could be a bit higher. Sitting on it feels like a moped. And I would like to feel more like MTB. Current seat height is 33 inches. Thus considering a new bike with 21 inch wheels. It would raise the seat height a bit. What would be the other implications, would the feeling of torque drop substantially? Pls advise

You could raise the seat height with a longer rear shock & maybe lower the footpegs.

Why does that dumb little motorcycle have pedals? Nobody is fooled by them. If you run afoul of the law, it's just like any other unregistered motorcycle.

Maybe replicate the geometry of a small adult sized motocross bike, like the Yamaha YZ125. Looks like by raising the seat height about 4 inches, and replacing the bottom bracket with foot pegs that are located about 1" lower would get pretty close. It has a 19" wheel on back and 21" on front, and has a standover height of 38.6"
 
The issue with that is that all of the hub motor steel homegrown frames have absolutely horrendous geometry. I don't believe it's possible to turn it into a full-size adult motorcycle. Even things like KTM Freeride-E feel toyish in comparison for someone over 6ft. Wheelbase, swingarm length, suspension stroke etc. are all comparatively smaller and can't be compensated for just by wheels alone.

Rear 19" wheel in a typical MX size is 100/90/19, which is just a smidge smaller than the 80/100/21 front. You seem to already have moped tyres - maybe try real high profile 19" motorcycle tyres, that could give you diameter (and height) increase on par with taller rims. I'm afraid that even that won't be satisfactory, if indeed what you want is a vehicle meant for riding as opposed to pedaling, for a full-size adult male.
