This info doesn't seem to be on the internet, so I thought I'd post it here.
A programming cable designed for an M500 motor also works to increase the speed limiter on a M200 motor. (They both use the house-shaped CAN connector for the display and some forum posts etc hinted that it might work, so I rolled the dice to buy a cable and it paid off!)
The method I used was a cheap 3rd-party programming cable from AliExpress:

This cable includes a physical button to increase the speed limit, so no computer was needed.
The instructions that came with it weren't much help, so here's what worked for me. Disclaimer: if it bricks your bike, it's not my fault! eg I had a scary moment where the motor wasn't working, thankfully when I re-did the process slightly differently it started working again
*With the bike turned off, unplug the CAN connector that's up at the display (there's no need to open the cover for the motor at any stage)
*Plug the programming cable into both ends of this connector
*Connect the programming cable to a USB power source. I used a power bank, so that there wouldn't be the complication of it trying to communicate with a computer etc. The red light on the programming cable should blink slowly.
*Turn on the Bafang display. The green light on the programming cable should blink quickly.
*Wait 10 seconds (perhaps it's just superstition, but this is what I did)
*On the programming cable, press the button the number of times required for your wheel size (once for 29" wheels)
*Wait 30 seconds
*On the Bafang display, enter the service menu (simultaneously press "+" and "-"). Go to Information then Speed Limit, it should now say 60km/h!
*Turn off the Bafang display
*Remove the programming cable and reconnect the bike's display cable
