Fatbike as a Commuter

I've never owned a Fat bike, but with the buzz surrounding the Storm kickstarter program, it really has pique my interest in the bikes. I am interested in getting my first ebike but really would use it mostly for short commuting probably less than 8 miles total in a day but in an area with some pretty good hills. I realize a fat bike is not made for this type of riding and I likely would do most of my riding on pavement. I live in the south free of snow and am not near the beach, but the darn things look so cool and look like they'd be fun to ride. So to my question, how terrible of a ride would a 8fun 750w mid drive be put on an entry six speed fat bike. Obviously, I'd have to build it myself but after reading here I think I'm capable.

They are great. For fair weather road fat biking I'd fit some fat road tires like the 3.5" vee speedsters though - they will cut down on noise, weight and rolling resistance.
