Help with setup and upgrades for a new E-Bike pair

Hello,
this is my first post and this place seemed like a good place to start

I was about to get my first E-bike for my daily commute to work (around 2 miles in each direction)
and as luck has it, my girlfriend won a pair.

these units are sold in Israel as sticker brands made in china and mine are called "Champion C1"
its an 8fun brushless 250W motor coupled with a 36V 10AH Li-ion Battery "Pedal assist" pair.
on paper they would get to 25 Km\H (Limited) and about 30K of range.
not my first pick but I cant complain since they came free of charge
So I decided to make the most of what I have.

In Israel all E-Bikes are limited to 25 Km/H new from the store im guessing via the controller.
a limit I would like to cancel so i can squeez a bit more speed out of them
I also want to install a throttle that would run the motor all the way to full power (lazy I know) and not the regulated 6 Km\H.
it seems like I have a port already set for the trottle on the handle bar (pictures included)

So I need help in picking out the right parts, I wonder if I should switch out the controller
to an unrestricted one or even a bigger one (350W or bigger if that would make any diffrence)
And what type of throttle should i use? it seems like this controller uses a 3 pin system.

I have a more than average knowledge in electronic compounents which means i can work a volt meter
and a soldering iron and know my way around the wires, so I want to this the DIY way

NOTE: all part should be available online, the best option would be eBay

I've included some pictures to help better understand the set up
1 - The bike
2 - the battery in its bracket over the controller located underneath the battery
3 - the handelbars with the gears and the operating hub (3 speeds)
4 - the pin on the handel bar which i suspect to be the throttle pin
5- the controller itself
6 - all the clutter and the wires running from the controller
7 - some basic battery data provided on the casing
