Need help with wiring for 2nd hand controller.

Hello everyone!
I'm building my first scratch built bike to replace my current e-bike and have a 2nd hand controller that i'm trying to work out all the wiring for.
Can any one help me with identifying what plugs/wires do what? I have included a load of pictures and also a link to a google document with the diagram drawn out and labeled.

The three wires at left on main photo would be the phase wires that run into the motor and that long black one if it has three wires look like throttle, that group of five with the jst connector is probably the hall sensor that also go into motor and the red/black at the controller would be power in from the battery, there may be a thinner red which would be the switch that needs power to, as for colour go with the same as motor and throttle for now and the other wires are accessories like regen brake or reverse or alarm etc but try to get motor spinning smoothly first then play with the rest, hope this helps but there may be some more experienced folk here that may help,
edit: if that black plug next to the three thick phase wires is a five wire then they go in the motor,( hall wires)

Thanks that helps alot! Quite new to all this any idea how you can program this unit without a cycle analyst and set the input volts and output? Sorry for the newbie question!

Great just been looking into it in more detail and you seem to have two labels for throttle. This is what i have left to work out... Also can you confirm on the 2nd pic if that is the 3 speed switch? Thanks!
